Kra Pao Moo – Stir Fried Pork with Basil 12/3

 This class has been canceled. Look up our class on Dec 10th. This traditional Thai dish is very famous in Thailand. When Thai people want street food or from a simple restaurant, they often go straight for Kra Pao Moo. It will generally range from medium spicy to blazing hot. Kra Pao Moo is made with ground pork, green bean, green onion, garlic, and fresh basil. Paan’s secret is to add lemongrass and kaffir lime leaves. This dish is very versatile and can be served alone, with jasmine rice or noodles, as a salad, or in a sandwich or spring roll. In our class, we will teach you how to make a basic Kra Pao Moo and then you can make a dish to take home as mild or spicy as you wish by adding fresh or ground chili pepper.

Thai Sausage 

Paan learned to make this dish as an ingredient for sandwiches, but it’s become a staple in her Spring Rolls. She likes this recipe because it represents a blending of cultures to her. The sausage is made with ground pork combined with black pepper, garlic, fish sauce, soy sauce, and sugar, then blended in a food processor. It is then rolled in tin foil – about 4-5” long by 2 1/2” in diameter and steamed for 25 – 30 minutes. After cooling it is cut in ¼” sticks. Paan will explain how it’s made and provide you with the recipe and a portion to take home to add to your favorite sandwich, salad, or Spring Rolls.

About The Instructor

Jeeranan was born in Suphan Buri Province, Thailand, where she developed her cooking skills from her father. Her nickname, Paan, was given by her grandmother at a young age. Paan lived and traveled throughout Thailand growing up since her father was a road engineer, giving her a unique familiarity with all the different cuisines found across the country. She attended Suansunandha University, graduating with a degree in business accounting. She resided in Bangkok and was employed by an international insurance firm as a life insurance agent when she met Roger. Many of the dishes developed for Thai Cuisine by Paan are from traditional recipes she enjoyed growing up. She has traveled throughout Asia, learning the cuisine of other cultures, as well.
