Krung op Woon Sen – Steamed Glass Noodles 12/10

 This lovely dish is always a hit because everyone loves Glass Noodles! The noodles are vermicelli made from mung beans. Paan will share her secret sauce made with garlic, black pepper, butter, oyster sauce, soy sauce, ground coriander root, coconut milk, and ginger. The flavor level is controlled by the amount of ginger added. The glass noodles are soaked in secret sauce with shrimp to prepare it for steaming.

Side Pork

Side pork is added to the Krung op Woon Sen to complete the dish in the traditional manner. Start with sliced side pork and cut it into 1” (bite-size) squares. Heat oil, garlic, coriander root (or cilantro), and black pepper in a stir-fry pan and add the side pork. Cook until it reaches the right flavor. Add the glass noodles and shrimp, cover and allow to cook at medium heat for about eight minutes, then flip it over and cook for an additional three minutes.

About The Instructor

Jeeranan was born in Suphan Buri Province, Thailand, where she developed her cooking skills from her father. Her nickname, Paan, was given by her grandmother at a young age. Paan lived and traveled throughout Thailand growing up since her father was a road engineer, giving her a unique familiarity with all the different cuisines found across the country. She attended Suansunandha University, graduating with a degree in business accounting. She resided in Bangkok and was employed by an international insurance firm as a life insurance agent when she met Roger. Many of the dishes developed for Thai Cuisine by Paan are from traditional recipes she enjoyed growing up. She has traveled throughout Asia, learning the cuisine of other cultures, as well.
